Salsa Tutto Mare
Ingredients / Serves 6
1/2 cup olive oil |
1 tablespoon fresh basil, chopped |
2 cloves garlic |
2 tablespoons parsley, chopped |
1 Spanish onion, chopped |
1 pinch crushed red pepper seeds |
6 pieces calamari, cleaned and sliced |
4 tablespoons tomato paste |
6 shrimp (16-20 count),
peeled and deveined |
1 cup water |
3 sea scallops, cut in half |
12 canned pear tomatoes, seeded and chopped |
1/2 tablespoon fresh oregano |
Salt and pepper to taste |
In a large sauce pan heat olive oil and garlic. Remove garlic when golden brown. Add
onions and calamari. Cook until tender.
Add shrimp, sea scallops, and cook for 8 minutes.
Add oregano, basil, parsley, red pepper seeds, salt and pepper to taste, tomato paste,
water, pear tomatoes, and cook approximately 45 minutes to 1 hour for medium consistency
and serve.
*Note: For healthier recipe...omit shrimp and scallops and replace with tuna or swordfish.
